These Chicken Cutlets are easy and delicious. Kids and adults will love them equally, and they are great for meal prep. I love these to make a chicken parm, or do a simple chicken cutlet burger.

Ingredients

500g / 1lbs skinless boneless chicken breasts

1 egg

1 tbsp water

1/2 tsp salt

2 Cups Everiday GF Breadcrumbs

4 to 5 tbsp avocado oil, for frying

If your chicken breasts are very thick, slice them in half horizontally. Using a meat mallet, pound each breast on a flat surface until each piece is about 1/4-inch thick.

In a medium-size bowl, crack the egg and whisk well. Add the 1 Tbsp of water and wisk to combine.

Dredge the chicken in the egg mixture first, then into the breading mixture, coating on both sides completely.

Heat avocado oil in a skillet. Once hot, add the chicken cutlets. Cook for 5-8 minutes on both sides until golden-brown.

    Feel free to add any other seasoning you like to the breadcrumbs. Taco seasoning, garlic powder, lemon pepper, and dried herbs are just some examples.
